About Tokusen Wagyu Bone Marrow (Sumsum Tulang)
Marrow is the soft tissue inside the leg bones — almost entirely fat, and one of the richest things on a beef carcass. Roasted, it loosens into something closer to butter than to meat, with a clean, nutty and deeply savoury flavour.
Roast the bones at high heat for 15-20 minutes, until the marrow is soft and just bubbling but before it liquefies and runs out of the bone. Serve with toasted bread, flaky salt and something acidic to cut the richness. Alternatively drop the bones straight into a stock or into sop sumsum, where the marrow enriches the whole pot.
