About Tokusen Wagyu Tritip
Tritip is a small triangular muscle from the bottom of the sirloin. It carries less fat than ribeye but has a concentrated, almost roasted flavour of its own, and it cooks quickly for a whole-muscle roast. Its quirk is the grain, which runs in two different directions within a single piece.
Grill or roast it whole to medium-rare and rest it. Then find the line where the grain changes, cut the piece in two along it, and slice each half against its own grain. Do that and it eats tender; ignore it and the same cut can seem chewy. A dry rub suits tritip well — there is less fat here to carry a heavy marinade.
