About Tokusen Wagyu Picanha (Tutup Tanjung)
Picanha is the cap muscle that sits on top of the rump, sold with its thick fat layer still attached. That fat is the entire point of the cut: as it renders it runs down through the meat below, which has a coarse, satisfying grain and a deep beef flavour that stands up well to live fire.
Score the fat cap in a diamond pattern without cutting into the meat, salt it generously, and always cook fat-side down first so it renders and crisps. Grill it whole, or cut it into thick C-shaped pieces, skewer them fat-side out and turn them over coals. Rest, then slice thin against the grain — the grain runs across the cut, not along its length.
