About Tokusen Wagyu Brisket NE (Sandung Lamur)
The navel end comes from the belly side, below the ribs, and it is built in alternating layers of muscle and fat. That structure gives it a richness few cuts can match and makes it instantly recognisable on the plate — the striped cross-section is its signature.
Sliced thin it is outstanding on a yakiniku grill or in a hotpot, where the fat layers melt almost immediately. Cooked whole and slowly it becomes meltingly soft, and it is the traditional cut for pastrami. Because it is genuinely rich, serve it with something sharp alongside — pickles, sambal, or a citrus dipping sauce.
