About Tokusen Wagyu Sirloin (Has Luar)
Sirloin (striploin) runs along the spine behind the rib. It carries more muscle fibre than ribeye, which gives it a firmer, meatier chew and a more pronounced beef flavour, while Tokusen's marbling keeps it tender all the way through. The strip of fat along one edge crisps beautifully and is part of the cut's character rather than something to trim away.
Treat it as a steak: sear hard on both sides, then stand the steak on its fat edge for a minute to render it, and rest before slicing against the grain. Sirloin is the workhorse of a steak menu — it portions consistently, holds its shape better than ribeye on a busy grill, and gives reliable results at volume.
