About Tokusen Wagyu Chuckroll (Sampil)
Chuckroll comes from the shoulder and neck, a hard-working area, so alongside generous marbling it carries seams of connective tissue and a bolder, more savoury flavour than the loin cuts. It is the cut that rewards technique rather than expensive real estate on the carcass.
Two directions work well. Slice it very thin — firm it in the freezer first for a clean cut — for shabu-shabu, yakiniku, sukiyaki or hotpot, where the marbling melts in seconds. Or cook it long and low as a pot roast or braise until the connective tissue breaks down into gelatin. Both suit Indonesian kitchens, from grilled slices to slow-simmered dishes.
