About Tokusen Wagyu Shank (Sengkel)
Shank comes from the leg, the most-used muscle group on the animal. It is lean in intramuscular fat but heavily threaded with collagen and connective tissue — the opposite of a quick-sear cut, and precisely why anyone cooking slowly values it.
Braise, stew or simmer it for hours and that collagen dissolves into gelatin, giving both meltingly soft meat and a stock with genuine body. It is the natural cut for soto, sop and slow-cooked curries, and boneless shank slices neatly for presentation. Do not rush it: shank is tough at one hour and tender at three.
